Cold day: Creamy Tomato Soup


The usage of quotation marks here reminds me a "little too much" of my "mother's dirty quotation habit", but still makes me laugh. What exactly is "soup" anyway?

I had some seriously good soup today at Luna Grill.
It was a little spicy, a lot of tangy tomato, and lots of zest! This has inspired me to create my own tomato soup recipe. Don't get me wrong, I love myself a good bowl of Campbells, but the time comes when you have to create your own soup recipe. It's like Choose Your Own Adventure, but for soups.

Anyone have good soup tips?

I make a mean taco soup:

1 lb. hamburger (I'm sure you can make it without)
1 can diced tomatoes
1 can corn
1 can black beans
1 package taco seasoning
1 can tomato paste
1 - 3 cups water depending on how thick you like it.

Throw it all together after browning the meat first (unless you forgo...) and boil - after bring to a boil simmer fo 15 minutes.

Serve - we eat it more as a dip with santitas, sour cream, avacado, and cheese

Yum, that sounds awesome Cara. It reminds me of you and Caroline always bringing home chips and tortilla soup. A good recipe for the fall and winter, too! Thanks!

I recommend using 50% red tomatoes and 50% tomatillos. This will give it a little bit of a different taste, but I think that your "zest receptors" will enjoy. If you'd like me to create a soup recipe, just give me the "high sign."
